These Giant Cornmeal Linzer Cookies came to life the way some of my favorite recipes do — by accident, or rather, by omission. I was halfway through testing a classic linzer cookie when I realized I was completely out of almond flour, the ingredient that traditionally gives linzers their tender, nutty crumb.
