I went back to Los Angeles for a quick visit a few weeks ago.   I spare my parents from picking me up at the airport, and I still have my house key on my ring, so I came back home to not much fanfare save for my dad in the kitchen meticulously kneading together a pie crust.  He mentioned wanting to perfect his Lemon Chess Pie which… if you were to ask me… was already pretty dang perfect.   I moseyed into the kitchen the following morning to my dad taking his parbaked crust out of the oven.  Ok ok.. The Trader Joe’s freezer section is filled with all kinds of delicious desserts, from classics that they carry all year to holiday favorites . Trader Joe’s Kunefe is one that caught my eye recently because it is a dessert that I wasn’t previously familiar with. I actually had it just before the holidays and enjoyed it so much that I ended up serving it a few times – even though I’m not getting around to posting this quick review until now. Kunefe is a Middle Eastern dessert that is made with thin shreds of phyllo-like dough that is layered with cheese and soaked in a sweet syrup. This particular version is a round that is slightly smaller than a dinner plate. It is filled with a blend of cheeses, soaked in a honey syrup and topped with chopped pistachios after baking. It comes frozen and in its own baking tray, which is very convenient because it means that you need to do virtually no prep to make this at home. The Kunefe bakes up to be golden and crisp, with a cheesy center that ha

These popular healthy bowl meals are all the rage lately. Poke is a Hawaiian specialty, typically made with raw ahi tuna that’s marinaded and then served with lots of veggies and tasty sauces. What if you don’t eat fish? We’ve got a whole food plant based (WFPB) version for you: vegan poke bowls! These tasty bowls are bursting with flavor, and they’ve got an unusual ingredient that amazingly gives the same texture and flavor as poke. Beets . Yep, you’re going to have to taste this to believe it…but it really works! Really, beet poke? Yes! Odd as it sounds, cooked beets stand in for the fish in this vegan poke bowl. Somehow the textures and the marinade really work! The beet poke comes out buttery and tender, savory with hints of soy, sesame and ginger. Just how to pull off this trick? H
